Swedish Meatballs

Ingredients
  

  • 1.5 lbs ground beef
  • 1/3 cup chopped onions
  • 1.5 cups dry bread crumbs
  • 2 large eggs, beaten
  • 1 tsp salt
  • 1 Tbsp sugar
  • 1/2 tsp pepper
  • 3/4 cup milk
  • olive oil
  • 6 cups beef stock
  • 8 Tbsp flour
  • 1.5 Tbsp lemon juice
  • 3 bay leaves

Method
 

  1. To make the meatballs, mix the beef, onions, bread crumbs, eggs, salt, sugar, pepper and milk together. Shape into 1 1/2 inch balls. Brown in olive oil
  2. Remove meatballs from pan. Save drippings for gravy
  3. To make gravy, blend flour into the pan with the leftover drippings on low heat.
  4. Slowly stir in stock and bring to a boil, stirring often.
  5. After gravy comes to a boil, stir in lemon juice and bay leaves.
  6. Put meatballs back into the gravy and cook slowly for 1 hour.
  7. Serve over egg noodles

Notes

**  I added some beef bouillon to the gravy to amp up the flavor a bit.
