Parmesan Crusted Cod
Ingredients
- 4 4-6 ounce cod filets, patted dry
- 1/4 cup mayonnaise
- 1 ounce parmesan cheese, finely grated
- 2 Tbsp chopped fresh parsley
- fresh ground pepper to taste
Instructions
- Preheat oven to 400
- In a bowl mix together mayo, cheese, parsley and pepper
- Spread mayo mixture evenly over cod filets
- Place cod on a parchment lined baking sheet
- Bake for about 12-15 minutes until fish flakes easily. Then switch oven to broil and broil for about 2-3 minutes – keep an eye on it, it can burn quickly!
Made this last night for dinner. It was so moist. I used Talapia but wanted to use Cod, store was out of it. Fish was very moist and the little bit of mayo that I used with the cheese gave it a great flavor. Definitely will make this again! P.S. I made the fish in my Air Fryer!…..yummy!
