Sandwich Bread (Yeasted)

Ingredients
  

  • 530 grams warm water (110° to 120°) 2¼ cups
  • tsp active dry yeast 2 packets
  • 50 grams sugar 1/4 cup
  • 17 grams salt 1 Tbsp
  • 52 grams oil 1/4 cup
  • 840 grams all purpose flour 7 cups

  • 2 loaf pans

Method
 

  1. In the bowl of a stand mixer, add water, sugar and yeast. Stir to dissolve. Let sit 5-10 minutes until yeast blooms
  2. Stir in oil and 1 cup of flour. Add salt
  3. Stir in the rest of the flour a cup at a time.
  4. Mix well. Turn mixer up to the speed you use to knead (4 on a Kitchen Aid, 2 on a Bosch). Knead for 7 to 8 minutes.
  5. Cover and let dough rise for 1 hour.
  6. Punch down down and divide into two.
  7. Shape first piece into a small rectangle and roll up tight from the short end.
  8. Pinch the seam together on the back and tuck in ends. (see attached video for a visual)
  9. Place loaf in greased loaf pan and shape second piece of dough the same way.
  10. Cover and let rise for another hour -dough should be slightly over the top of the loaf pan.
  11. Bake on the lower rack at 375 for 25-30 minutes.
  12. Let cool in pan on wire rack for 10-15 minutes. Remove from pans and let cool completely. Slice into 16 slices.
