Mexican Rice II

Ingredients
  

  • 2 tsp olive oil
  • 1 cup long grain rice, uncooked
  • 1 clove fresh garlic
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 1/4 cup tomato sauce
  • 14 oz chicken broth
  • 3 Tbsp chopped fresh cilantro

Instructions
 

  • In a large saucepan, heat the oil over medium heat
  • Add the rice, stir to coat in the oil and cook until slightly golden
  • Stir in the garlic, salt and cumin
  • Add the tomato sauce and chicken broth
  • Turn the heat to medium high heat and bring the mix to a boil.
  • Once boiling, reduce heat to low, cover with a lid and allow to simmer for 20-25 minutes or until rice is tender
  • Remove from heat, toss in chopped cilantro, stir to combine
