Mexican Rice II
Serves 4
Ingredients
- 2 tsp olive oil
- 1 cup long grain rice, uncooked
- 1 clove fresh garlic
- 1/2 tsp salt
- 1/2 tsp cumin
- 1/4 cup tomato sauce
- 14 oz chicken broth
- 3 Tbsp chopped fresh cilantro
Instructions
- In a large saucepan, heat the oil over medium heat
- Add the rice, stir to coat in the oil and cook until slightly golden
- Stir in the garlic, salt and cumin
- Add the tomato sauce and chicken broth
- Turn the heat to medium high heat and bring the mix to a boil.
- Once boiling, reduce heat to low, cover with a lid and allow to simmer for 20-25 minutes or until rice is tender
- Remove from heat, toss in chopped cilantro, stir to combine
