Corn Muffins
Ingredients
- 1 can creamed corn
- 1 cup corn meal
- 2 tsp baking powder (omit if using self rising corn meal)
- 3/4 tsp salt (omit if using self rising corn meal)
- 2 eggs
Instructions
- Preheat oven to 400
- Spray a 12 cup regular size muffin pan with non stick spray.
- Mix all ingredients together.
- Fill muffin tins 2/3 full
- Bake for 15 minutes.
Hi Joan – Is there a special brand of creamed corn that you use for this recipe? At Walmart, all I could find had sugar on the ingredient list. So I would have to count it right? Love your web site and videos. Thanks for keeping it real!
I use any brand. All creamed corn has sugar, it is figured into the points for the muffins 🙂 Thanks for the kind words
