Cinnamon Roll Baked Oatmeal
Ingredients
Oatmeal
- 1/2 cup rolled oats
- 1/4 tsp pure vanilla extract
- 1 tsp cinnamon
- 1 Tbsp brown sugar
- 1/4 cup unsweetened applesauce
- 1/4 cup milk
- pinch salt
- Optional: Raisins, nuts, brown sugar (for top),
Frosting (optional)
- 1 Tbsp cream cheese
- 1 Tbsp powdered sugar
- 1/4 tsp pure vanilla extract
- milk (optional)
Instructions
- Preheat oven to 375.
- Combine oats, vanilla, cinnamon, sugar, applesauce and milk
- Pour into a mini loaf pan or 1 cup ramekin that has been sprayed with non stick spray
- Cook about 18-20 minutes or until it's firm
- Set your oven to "high broil" and broil for 1 – 1 1/2 minutes – don't take your eyes off of it!
Cream Cheese Frosting (optional)
- In a small bowl, mix cream cheese and powdered sugar.
- Add vanilla. If too thick, add milk, 1/4 tsp at a time
- Frost oatmeal.
Joan, how do you make this if the whole family is there for breakfast, or even just you & Doug? Do you double the recipe & split between two ramikins, or some other way? It sounds delicious!!! Thanks!

I would make it x4 and put it in an 8×8 dish! I think that would work perfectly!
Love this recipe, traded monk fruit golden for white, added an egg and used 1/4 cup premire protein vanilla drink instead of almond milk for added protein. Also added a sprinkle of baking powder to add to the rise. So yummy. thanks so much
