Baked Custard Oatmeal

Ingredients
  

  • 2 cups cooked oatmeal
  • 1 1/2 cups cottage cheese
  • 2 eggs
  • 1 cup milk
  • 1/2 cup sugar
  • 1/2 tsp cinnamon
  • 1/8 tsp cardamom
  • 1/2 tsp vanilla
  • 1/2 tsp almond extract

Method
 

  1. Preheat oven to 325
  2. Spray a 9×9 baking dish with non stick spray
  3. In a large bowl, blend oatmeal, cottage cheese, eggs, milk, sugar, cinnamon, cardamom, vanilla extract and almond extract with an electric mixer until smooth.
  4. Pour batter into prepared dish and bake for approximately 1 hour-1 hour 10 minutes. *start checking after 45 minutes*
  5. Serve warm or room temp.

  1. I made this today. It was so good! I don’t like the texture of cottage cheese so I blended all the ingredients in my blender then added the mixture to the pan. Once baked, I topped my serving with sliced bananas and sugar free maple syrup. Thank you for this great recipe!

  2. I made this yesterday to have for a quick healthy breakfast. What do you call a serving as amount in grams or oz. I really want to get as close to it. It’s really good.

    Joan, I was wondering how you figured this as 4 points a serving? My calculations say the ingredients are 23 points total. I made it last weekend and enjoyed the almond extract flavoring.

      Cashew milk – 1
      Eggs – 0
      Lakanto Monkfruit – 0
      spices – 0
      Total 16 points divdied by 4

        I apologize. I missed the word “cooked” oats and I made the recipe with raw oats! I’ll have to try it again now, as I’m sure the texture is much different.
