Baked Custard Oatmeal
Serves 4
Ingredients
- 2 cups cooked oatmeal
- 1 1/2 cups cottage cheese
- 2 eggs
- 1 cup milk
- 1/2 cup sugar
- 1/2 tsp cinnamon
- 1/8 tsp cardamom
- 1/2 tsp vanilla
- 1/2 tsp almond extract
Instructions
- Preheat oven to 325
- Spray a 9×9 baking dish with non stick spray
- In a large bowl, blend oatmeal, cottage cheese, eggs, milk, sugar, cinnamon, cardamom, vanilla extract and almond extract with an electric mixer until smooth.
- Pour batter into prepared dish and bake for approximately 1 hour-1 hour 10 minutes. *start checking after 45 minutes*
- Serve warm or room temp.
I made this today. It was so good! I don’t like the texture of cottage cheese so I blended all the ingredients in my blender then added the mixture to the pan. Once baked, I topped my serving with sliced bananas and sugar free maple syrup. Thank you for this great recipe!

I made this yesterday to have for a quick healthy breakfast. What do you call a serving as amount in grams or oz. I really want to get as close to it. It’s really good.

Joan, I was wondering how you figured this as 4 points a serving? My calculations say the ingredients are 23 points total. I made it last weekend and enjoyed the almond extract flavoring.

What did yours look like?
I apologize. I missed the word “cooked” oats and I made the recipe with raw oats! I’ll have to try it again now, as I’m sure the texture is much different.
