Mexican Rice

Ingredients
  

  • 2 cups rice cooked
  • 2 tsp olive oil
  • 1 Tbsp taco seasoning
  • 1/2 tsp cumin
  • salt and pepper to taste
  • 1 can Rotel (diced tomatoes with green chilies)

Method
 

  1. In a large skillet, heat olive oil
  2. Add cooked rice to hot skillet and stir.
  3. Add cumin and taco seasoning and salt and pepper. Add rotel.
  4. Turn heat to low, let cook 8 minutes, stirring frequently.
  5. Serve.
