Tomato and Mozzarella Pizza with Basil

Servings: 8 small slices

Ingredients
  

  • Favorite Pizza Crust
  • 1 pound tomatoes
  • 1/4 pound mozzarella cheese, shredded
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • salt and pepper to taste

Method
 

  1. Core and slice tomatoes into very thin slices. Lay on paper towels to absorb excess moisture.
  2. Combine the cheese, oil, garlic, basil and salt and pepper in a bowl and set aside
  3. Roll out dough on a pizza pan or preheated pizza stone into a 12 inch circle.
  4. Line the dough with concentric circles of slightly overlapping tomato slices, leaving a 1/2 inch border around the edge.
  5. Sprinkle the cheese mixture evenly over the tomatoes.
  6. Bake at 400° for about 12 to 15 minutes or until cheese starts to melt and brown.
  7. **If you prefer ( I do!) you can parbake your crust for about 8 minutes before putting your toppings on
