Method
- Preheat oven to 400
- Mix dry ingredients.
- In a separate bowl, mix wet ingredients
- Add dry mixture to wet mixture and stir until just moistened - do not overmix
- Fold in carrots and walnuts.
- Lightly grease (spray) a muffin tin.
- Fill each cup 2/3 full of batter
- Bake for 15 to 20 minutes. Makes 12 muffins
