Manhattan Beef Roast

Ingredients
  

  • 2 pounds beef roast chuck or round
  • 1 medium onion, sliced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper adjust according to taste.
  • 1/2 teaspoon salt adjust to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Method
 

  1. Prepare the Base - Start by placing the sliced onion at the bottom of your slow cooker to create a flavorful base.
  2. Season the Beef - with garlic powder, onion powder, thyme, salt and pepper
  3. Add the Beef - Lay the seasoned beef roast on top of the onions, pressing down to ensure contact.
  4. Pour in the Broth - Pour in the beef broth, Worcestershire sauce, and soy sauce over the beef, ensuring liquids cover at least half of the beef.
  5. Set Up for Cooking - Cover the slow cooker and set it to LOW for 8 hours or HIGH for 4 to 5 hours.
  6. Shred the Beef - Once cooking is done, remove the beef and shred it into bite-sized pieces.
  7. Strain the Broth - Strain the onions from the broth, returning only the liquid back to the slow cooker.
  8. Thicken the Gravy - Mix cornstarch with cold water to create a slurry and stir into broth to thicken.
  9. Serve and Enjoy - Layer mashed potatoes, shredded beef, and ladle gravy over the dish.
