Thai Coconut Curry Chicken

Ingredients
  

  • olive oil spray
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • chopped ginger ( I use the squeeze kind, about 1 tsp)
  • 1 can Thai Kitchen coconut milk
  • 2 1/2 Tbsp Thai Kitchen Green Curry Paste
  • 1 Tbsp honey
  • salt and pepper
  • 1 1/2 pounds chicken breast, cooked and cubed
  • 1 bag frozen, steamable sweet potatoes
  • 1 bag spinach
  • 3 Tbsp dried basil
  • lemon juice

Instructions
 

  • Spray pan well and cook onions until translucent. Add ginger and garlic and cook 1-2 minutes.
  • Shake unopened can of coconut milk very well, then add to onion mixture
  • Add 2 Tbsp green curry paste and 1 Tbsp honey.
  • Add chicken and sweet potatoes and let simmer 10 minutes.
  • Remove from heat, add spinach and the rest of the seasonings.
  • Serve over rice.
