Thai Coconut Curry Chicken
Ingredients
- olive oil spray
- 1 cup chopped onion
- 3 cloves garlic, minced
- chopped ginger ( I use the squeeze kind, about 1 tsp)
- 1 can Thai Kitchen coconut milk
- 2 1/2 Tbsp Thai Kitchen Green Curry Paste
- 1 Tbsp honey
- salt and pepper
- 1 1/2 pounds chicken breast, cooked and cubed
- 1 bag frozen, steamable sweet potatoes
- 1 bag spinach
- 3 Tbsp dried basil
- lemon juice
Instructions
- Spray pan well and cook onions until translucent. Add ginger and garlic and cook 1-2 minutes.
- Shake unopened can of coconut milk very well, then add to onion mixture
- Add 2 Tbsp green curry paste and 1 Tbsp honey.
- Add chicken and sweet potatoes and let simmer 10 minutes.
- Remove from heat, add spinach and the rest of the seasonings.
- Serve over rice.
