Tomato and Mozzarella Pizza with Basil

Ingredients
  

  • Favorite Pizza Crust
  • 1 pound tomatoes
  • 1/4 pound mozzarella cheese, shredded
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • salt and pepper to taste

Instructions
 

  • Core and slice tomatoes into very thin slices. Lay on paper towels to absorb excess moisture.
  • Combine the cheese, oil, garlic, basil and salt and pepper in a bowl and set aside
  • Roll out dough on a pizza pan or preheated pizza stone into a 12 inch circle.
  • Line the dough with concentric circles of slightly overlapping tomato slices, leaving a 1/2 inch border around the edge.
  • Sprinkle the cheese mixture evenly over the tomatoes.
  • Bake at 400° for about 12 to 15 minutes or until cheese starts to melt and brown.
  • **If you prefer ( I do!) you can parbake your crust for about 8 minutes before putting your toppings on
