Core and slice tomatoes into very thin slices. Lay on paper towels to absorb excess moisture.
Combine the cheese, oil, garlic, basil and salt and pepper in a bowl and set aside
Roll out dough on a pizza pan or preheated pizza stone into a 12 inch circle.
Line the dough with concentric circles of slightly overlapping tomato slices, leaving a 1/2 inch border around the edge.
Sprinkle the cheese mixture evenly over the tomatoes.
Bake at 400° for about 12 to 15 minutes or until cheese starts to melt and brown.
**If you prefer ( I do!) you can parbake your crust for about 8 minutes before putting your toppings on
