Banana Cake with Cool Whip Pudding Frosting

Ingredients
  

Cake

  • 2 bananas, mashed well
  • 1 box sugar free yellow cake mix
  • 1 box sugar free instant banana cream pudding (can use vanilla, but banana cream is better)
  • 1 single serve unsweetened applesauce (or 1/2 cup)
  • 4 eggs
  • 1 tsp vanilla
  • 1/2 cup water

Frosting

  • 1 box sugar free instant vanilla pudding mix
  • 1 cup 1% milk
  • 1 8 oz tub fat free cool whip

Instructions
 

For cake

  • Preheat oven to 350. Grease a tube pan or baking pan of choice (2- 9 inch pans or a 9×13) I have only done it in a tube and bundt pan, so I can't vouch for the outcome in others!), set aside
  • In a large mixing bowl, combine bananas, cake mix, pudding mix, applesauce and vanilla. Mix until combined.
  • Add eggs, mix.
  • Add water, mix until combined and then beat on medium speed for 2 minutes
  • Pour into prepared pan and bake for 40-50 minutes or until toothpick inserted in center comes out clean.
  • Cool for 10 minutes. If using a pan other than a 9×13, remove from pan and let cool completely.

For Frosting

  • While cake is baking, prepare frosting.
  • In a mixing bowl, combine pudding mix and 1 cup of cold milk. Whisk until combined. Let sit 5 minutes.
  • Fold in 8 oz fat free cool whip.
  • Refrigerate until ready to use, when cake is completely cool.

To finish

  • Frost cake. Cut into 15 servings. Store cake in refrigerator.

    I made this tonight for our ladies meeting at church and EVERYONE raves about it and couldn’t believe it was sugar free. I went a step further and drizzled Smuckers sugar free Carmel syrup over the top.

  2. I have a question. I printed out the recipe and went to the store for the ingredients and was going to watch the video and do step by step along with you, and at the very beginning you showed 2 mashed up bananas.

    I was bananas?? What bananas??? Where does it state bananas on the recipe, lol? I made it anyway and the previous person who posted a comment didn’t make a mention of them, so I guess the cake is fine without them.

    Just wanted you to know in case you wanted to update your recipe. I very much appreciate all you do. I frankly don’t know how you have the time to do it all! Thanks so much!!

    1. Oh my gosh I am so, so sorry. I don’t know how I overlooked the bananas! I have fixed the recipe and I appreciate very much you pointing out the error. PS I’n curious how did your cake turned out without them?

      1. I caught it by watching your video along with the recipe and I had one frozen banana that I had saved for a smoothie and used it. Hubby at home loved it and I took the remaining to work and it is completely gone, so I’d say it’s a keeper! Again, just wanted to help, you do so much daily and I didn’t want to sound negative, just wanted to help in case needed to know. Thank you!

  3. I posted a comment yesterday about the 2 mashed banana’s being left off the print out recipe, but it was deleted. Did I do something wrong? I didn’t get a reply by email so just wondering if I offended somehow?

      1. Yes, I just saw and replied back! It is 1/15 at 8:47 pm, but posting shows Jan. 16 at 2:40 am, but anyway, it was fine and thank you for the reply! Everyone works so hard to help everyone and wanted to make sure I my comment didn’t come off the wrong way. Thank you for everything you do.
