Banana Bread

Ingredients
  

  • 1 banana ripe
  • 1/4 cup quick cook oats
  • 1 egg
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp vanilla
  • 1/2 tsp baking powder
  • sweetener of choice optional
  • 16 pieces Lily's Chocolate Chips optional

Instructions
 

  • Mash banana well with an electric mixer. Add remaining ingredients except chocolate chips. Mix well with electric mixer for about 2 minutes. Pour into a well greased mini loaf pan. Bake at 350 for 30-35 minutes. Let cool 15 minutes, remove from pan.

    1. Yes! You need to do the recipe 4X – 1cup oats, 4 eggs, etc. The whole loaf would be 8 points, so depending on how many servings you get, will determine the points per slice. The cook time will be different too – I would start checking at 30 minutes and when a toothpick inserted in the center comes out clean it is done

    I loved this – but think I may have messed up something – It had a bit of a bitter aftertaste. Don’t know if the monk fruit I added (will not do again and see), bananas that were taken from freezer. I did taste one of the lilly’s – they are bitter to me. Was better after I took off the Lilly’s, but still think the monk fruit an issue.

    1. Hmmmmm….I have never used monk fruit, but I think many sweeteners have a bitter taste, so that could be it. And yes, the Lily’s are bitter because they are dark chocolate! I find I don’t need any extra sweetener in the mix, but many people do. Maybe try a different kind?

  2. When I put the recipe in the WW program, it comes out to 3 free style points for the entire loaf, and 2 fsp for 1/2 the loaf.

    1. The only ingredient with points is the oats. A 1/4 of oats is 2 points. So 2 points per loaf. I put it in the recipe builder also and mine comes up 2.
