Bisquick Impossible Breakfast Casserole

Ingredients
- 9 oz frozen shredded hashbrowns
- 6 oz Canadian bacon, diced
- 1/2 small onion, finely chopped (or to your taste)
- garlic powder, to taste
- salt and pepper to taste
- 4 oz shredded cheddar cheese
- 4 eggs
- 2 cups milk
- 1 cup Bisquick or Homemade Bisquick
Instructions
- In a medium bowl, mix together hash browns, Canadian bacon and onion. Season with garlic powder, salt and pepper to taste. Add 1/2 the cheese.
- Spread potato mixture over the bottom of a sprayed 9×13 inch baking dish; set aside.
- In another bowl, beat eggs, season with salt and pepper and whisk in milk.
- Whisk in Bisquick (make your own – recipe here: https://riseandshinerecipes.com/homemade-bisquick/ )and beat until smooth. Add remaining cheese. Mix well
- Pour over the top of the hash brown mixture. Bake, uncovered, at 400 for about 30 minutes or until set. Let cool slightly before cutting. Cut into 6 or 8 servings.
Joan, I just found your channel on YouTube a couple of days ago & I can’t wait to try some of your recipes. They all look so good!!! The first one I’m going to try is the seasoned pretzels. I am 66 & my husband is 65 & our daughter is 38. She is a wonderful delight. Her name is Kelly & she has Down Syndrome. I’m making the pretzels because I know she will love them. I will too, but I’m sure you all about moms making things their kids will like. I also have 2 son’s who are married & have their own families, which include a total of 4 grandchildren between them & I dearly love to cook & bake for them. As I said I’m 66 & I can’t begin to tell you how many times I’ve joined WW over the years, but I am determined that this will be my last time joining & the first time to take it off & keep it off. I’ve been following a couple of other WW ladies (much younger then me) on YouTube & I like their channels & recipes, but it is so nice to find someone who’s lifestyle & age are similar to mine. I did want to add, I will be praying for your father in law. My dad isn’t with us anymore, but if he was I know I would be very concerned & worried about him. BTW I like your positive attitude towards the Corona Virus. It is worrisome. My husband, daughter & I all have health conditions that put us at higher risk, so we are going to stay put at home & will only leave when absolutely necessary. I’m trying really hard to not get really upset about all of this, but like I said, it is pretty scary. I hope you & all of your loved ones stay well. I will be looking for more of your videos. I love trying new recipes!!
