Yeasted Boule (Round Bread Loaf)

Ingredients
  

  • 355 grams warm water (110° to 120) 1½ cups
  • 1 tsp instant yeast
  • 1/2 tsp sugar
  • 480 grams all purpose flour 4 cups
  • 1 tsp salt

Method
 

  1. Place water, sugar and yeast in a large bowl. Stir to dissolve
  2. Let the yeast bloom for 5-10 minutes
  3. Add in flour and stir. Add in salt and stir until well mixed.
  4. Place dough in greased bowl, cover and let rise for 90 minutes.
  5. When dough has about 20 minutes to go, preheat your oven to 450°. Place covered dutch oven in oven while preheating.
  6. After dough has risen for 90 minutes and oven is hot, place dough on a floured surface and shape into a ball. Pull the ball towards you and turn it, creating tension in the ball (see attached video for visual).
  7. Once your ball is shaped, take a sharp knife or bread lame and make a cut down the middle. Place dough on a piece of parchment and place in your dutch oven. BE CAREFUL-dutch oven is VERY hot! USE POTHOLDERS!
  8. Bake, covered, for 30 minutes, uncover and bake an additional 10-12.
  9. Remove to a wire rack and let cool completely.
