Joan
Quick easy breakfast that is ready when you wake up!
4 Servings, about 1 to 1 1/4 cup each
Course Breakfast
Servings 5

Equipment

  • Slow Cooker

Ingredients

  • 2 large apples, sliced***see notes below
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • pinch salt
  • 2 cups oatmeal (I prefer Old Fashioned, but quick cook will do)
  • 2 cups milk
  • 2 cups water

Instructions

  • In a slow cooker, place apples in the bottom, then sprinkle on the brown sugar, then cinnamon, nutmeg and salt. Pour in 2 cups oatmeal, then 2 cups milk over the oats, then 2 cups water. DO NOT STIR!!!
  • Cook overnight for 8 hours on low (my quick oats were done in 7 hours).
  • Stir and serve – I served with a tsp of walnuts and some vanilla creamer.

Notes

You can change this up to suit your tastes – in place of apples use berries (about 2 cups mixed berries)

Could you use a white sugar substitute? I haven’t been able to find brown sugar substitute yet.

    1. Yes! I’m sure you can. I get my brown sugar substitute from Amazon. I like the Sukrin Gold. I have it linked in my Amazon store – the link is on the home page 🙂

    2. I’ve found Swerve Brown Sugar at Sprouts and Amazing. I prefer it over Surkin Gold. Everyone has different tastes.

    1. The recipe uses 2 cups almond milk, so each serving gets 1/2 cup, that rounds up to 1 point on purple. I put it in the recipe builder and that’s what it gave me!
