Instant Pot Pancake Bites

Ingredients
  

  • 1 cup Protein Pancake Mix (Birch Benders, Trader Joes, Kodiak)
  • 2 eggs
  • 1 cup milk
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • blueberries, other fruit

Equipment

  • Instant Pot
  • Egg Bite Molds

Method
 

  1. In a bowl, mix pancake mix, milk, eggs and baking powder.
  2. Divide batter evenly among 14 egg bite molds
  3. Pour 1 1/2 cups water in pressure cooker.
  4. Place lids on molds and offset stack them in the Instant Pot.
  5. Cook on manual high pressure for 14 minutes. Let natural release for 5 minutes, then manual release.
  6. Flip over mold and push the top of your thumb into the bottom of the mold to release the pancakes.

  1. Joan, I don’t have the egg bite molds for my instant pot. Can I cook them in the oven in a mini muffin pan? These look like they rise really nicely. I’m looking forward to making them.

    I made these right after I saw the video, as I hadn’t eaten supper yet. They were quite good! I forgot the baking powder though and they rose just fine with out it. I used the strawberry chocolate chip kodiak mix. I diced small strawberries and put them in each cup with 6 bake believe dark chocolate chips(didn’t need these either on hindsight). I will make them again!
